How do the overnight dockings work?

We have been tempted by our TA to switch our Star Alaska cruise in September to the Pride of Hawaii cruise instead.

 

We are wondering how the overnight docking works in Hawaii. The itinerary states that there is an overnight stay in Maui and another one in Kauai. Do they let you on and off the ship the entire time you are docked?

 

Any insight on the Pride of Hawaii? From what I understand she doesn't launch until this April?? It's such a good deal right now that we are very tempted to change our booking and need to make a decision this week.

We did an overnight docking in Bermuda and could leave the ship at any time.
