You don't need to alert the pitboss, they'll occasionally come over with their iPad; if you see the pitboss start to approach your table, if you have the means to bet more do so and when he leaves back off your bet.

For drinks at the casino, if it's slow you can ask the pitboss to find a drink server for you.  Order doubles or multiple drinks.  With wine, you can put two in your checked luggage and two in your carry on
