Seabourn World Cruise veterans - advice on "can't miss" destinations / excursions / experiences?

Goaliemom and I are departing in January on the 2023 world cruise - Miami to Barcelona westbound. It's mostly southern hemisphere, and we're looking for advice from those who've been on that route for things not to miss! We're veteran Seabourn cruisers, so mostly looking for the truly can't-miss port things in the Southern Hemisphere. My lifetime of business travels sadly didn't include French Polynesia, much of South America, or Africa.

 

One definite on our list is an overnight safari in Kenya.
