For your deep sea fishing inquiry, go to www.aruba.com and look under "things to do" -- "water" -- you will be given a few different options. Contact the chater boats directly.

You could hop in a taxi and tell him/her what you would like to see, however seeing it on your own is 1/2 the adventure. Most of the popular sites in Aruba are fairly easy to find w/ a good sense of direction as Aruba is a small island and almost everything feeds off of the main road (L.G. Smith Blvd) or the highrise road. There are a few car rental places as you walk off the ship where you could rent a car (and receive a decent map of the island) for $30-$50 for the day and venture off on your own for what you wanted to see.

The nicest swimming beach IMO is Eagle Beach (LaCabana Hotel), Palm Beach is more populated. For snorkeling, Baby Beach or De Palm Island are the best.
