Trying to figure out an excursion for a mixed physical activity group

Taking a cruise with me (41m), wife (38F), and son (9m).   We've done several cruises before but this time my parents (late 60s) are joining us as well.  In San Juan, my dad is going to do the forts by himself so we're looking for an excursion that the rest can do.

 

 

Wife and I want something jungle/rainforest-y, we're in good enough physical shape to do whatever and so is son.  However, my mom has pretty limited mobility.  They have cruised before and done the bus and shopping tour type excursions.  Is there anything in San Juan that can accomodate both?   Rainforest tour where you can do waterfalls/swimming but low mobility people can stay on the vehicle and just watch.
