Excursion on Embarkation Day?

 We're cruising on the Euribia late this fall. The shore excursions PDF has excursions listed on Embarkation Day but they are not on the app. The Customer service folks I called said they could book those for us but could not explain how it would work with embarkation and said, that would be a question for the "onboard" staff. Obviously, we can't ask the onboard staff until we are on board. A classic catch-22 but not completely surprising from MSC. Has anyone taken an excursion on embarkation day? If so, how does that work, logistically? Thank you!!
