Does anyone know if the Sofa turns into a trundle on the 2Ds on the Odyssey of the Seas?

Unlikely as the even numbered categories are usually for only two people (with maybe a third person on the sofa without it being a bed).

They do not.  2D are double occupancy rooms. 

 

I've been in many different double occupancy rooms on Odyssey and other Q class ships and none would convert to a trundle.
