Go ahead and book reservations at the specialty restaurants as soon as those opportunities open up prior to your cruise segment. As for the miso sea bass: As labonnevie advised: Not to worry. Check the Compass Rose dinner menu on the TV to see if the sea bass is on the specials list. The dinner menus usually get posted late morning. To be more specific, we had miso sea bass twice on the Navigator last fall (also lobster tempura) by requesting it in advance. They were all delicious.
