Late Dining question on Edge

Hi, I have been on Celebrity twice now but always had Select Dining. This next cruise I am looking at only has Late Dining. This can be a dealbreaker as we don't eat that late (East Coasters sailing in Alaska). Can we do Select Dining in the MDR even if we are assigned Late?

I know we can use the OVC but would prefer not to.

As far as I know all 4 Main Dining Rooms on Edge Class Ships are anytime dining.

No matter what you book prior to the cruise

On Edge there is only Anytime (Select) Dining no matter what the app says.

Our "assigned" dining was Late but we were told it is Anytime Dining.  As mentioned, show up where and when you want to eat and you will be fine.
