Time Zone

I am confused at what the island time is. I kept hearing it was an our behind eastern time. We will be on the Inspiration which leaves from Tampa. We get to Grand Cayman at 7am ship time so I kept thinking 6am island time. I just emailed Capt Bryan to get some basic information and they have an automated response (until they write you back) that says:

Local time:

Please note that our local time is *always* the same

as Eastern *Standard* Time. The Cayman Islands do *not*

observe Daylight Savings Time.

I just want to make sure I have the right times.

Grand Cayman is in the eastern time zone, but doesn't observe daylight savings time. That puts them the same as eastern states during the winter and the same as central time zone states while we are on daylight savings time.
