How can I do a sunset sail, staying till 10

Carnival doesn't have any early evening activities planned for my Triumph Jan 20th cruise. Does anyone know whom I can contact - non ship - tour company for an evening sail or some type of evening excursion. What do most people do till 10 pm?

There is a company that does sunset sails, but gosh the sunsets here at 5:30 nowadays, so it's still very early. Cozumel Sailing is the name of it.
