2. Once onboard, what time do they start taking dining room/ alternative

reservations?

Where are you sailing from - New York or San Juan?

 

If San Juan, usually around 1:00. In NY it is earlier, usually around noon. And both those times are dependent on whether there are any problems on the ship upon debarkation of the previous cruise.

 

As soon as you get on the ship you can make reservations at the alternate dining rooms.
