Must Sees for St. Lucia

We will visiting St. Lucia in a few weeks on the Carnival Destiny. What are the best excursions/must sees?

We were in St Lucia from Princess during the first part of December, and we wanted to get a good overview of the island, and be sure to see the Pitons. We ended up by pre-arranging a tour with Cosol based on recommendations from this board. He was fabulous, and the tour was exceptional! We saw the Pitons from the Jalousie (Hilton) hotel on beach between them, as well as a waterfall, volcano, banana plantation, etc. I've reported in other posts more thoroughly.
