Is is best just to take US Dollars or should I be bringing local currency for Jamaica, Cayman Islands, Mexico, St Thomas and St Maarten?

All those places happily accept US dollars!

 

In general all touristy places will accept credit cards for admissions and purchases. The only place you might want US bills is like a flea market or hair braiding, and also for taxis.

I presume that you knew that St Thomas is part of the US....

But, take a lot of small US bills. Some shops love to say they have no extra US bills and give you the local currency for the change you're due. That becomes a pain ... and you're never sure you got the correct exchange. A little foreign currency is sometimes a nice souveneir ... especially for kids.
