You can also withdraw cash at the purser's desk using your credit card. You tell them how much you want and they'll give it to you and charge it to your card. They can convert US dollars to French Polynesian francs but not to New Zealand dollars. They'll also cash travellers' cheques at the desk.

The one snag we ran into on the ship was that while they would convert dollars into CFP (and NZD when we were on board in '04), they would not buy anything back. We had to make our exchange at the airport or a local bank in Papeete.

Did the ship just add the cash into the total credit card charge at the end, or actually withdraw it from your card at the time, so that you'd have to pay daily interest on it like a regular cash transaction using the cc?

They would withdraw it from your card at the time. Also, I should note that the ship charges a fee for doing this- I think it was 2% but not sure (so if you withdraw 500$ using your credit card, they would charge you a 10$ fee).
