Does the Galaxy have metal cabin doors? I'm going to have a magnetic door decor for Thankgiving (Turkey in Turkey)..will it 'stick'?

Yes they do - in fact every cruise ship we've been on has metal doors.

Not only are the doors metal but so are the walls. Just returned Saturday from our 12 day E. Med. cruise on Galaxy and took two magnets and hung a sheet listing our itinerary and tours we were taking on the wall. (There were three of us and at times were on different tours in port) It worked great.
