Surprise VOW RENEWAL Ceremony-HELP HELP!!

My husband and I will be cruising to Cozumel in December for our 5th year anniversary. We were not able to have a wedding ceremony due to an unexpected military deployment. Our originial plan was to have a ceremony on our 5th, but decided to take a cruise (this will be our first) instead. I would love to surprise him with a vow renewal ceremony on the beach in Coz, but I can't find any information on it. Is there anyone out there that has any info or would be able to help? I'm desperate!
