Dolphin Discovery times vs. ship times?

If we book a Dolphin Discovery excursion on our own through the website, if they post a time as 12:00 is that the same as ship time?

 

I read on the Cozumel site that ships coming for the East are ahead an hour as far as ship time to Cozumel time. I am really confused now:confused:

 

If I book a swim for 12:00 on the Dolphin Discovery Website, does that mean my watch, with the ship time, will say 1:00?

When we cruised to Cozumel on the Magic last year, the ship's time was changed (along with our watches) as we crossed time zones.
