Hobart, Tasmania, need Itinerary Help

I am thinking of visiting Hobart, Tasmania, and have only 2 nights. Arrive 10:00 am on a Monday, and depart at 8 am two nights later on a Wednesday. I read that Tasmania is great to visit, but to be honest, I am not sure what to see and do. I am looking for a suggested itinerary, or what to do, where to go logistically, given the short time frame as as described above. Will be traveling in November. I look forward to your help. I suggest spending the Monday around Hobart city having a look at the historic/heritage sights particularly around the waterfront. Use Tuesday for a full-day tour to one of the surrounding attractions for which Tasmania is renowned, such as Port Arthur (an historic convict prison site), the Huon Valley (picturesque rainforests and villages) or Bruny Island (wilderness).
