What is the correct pronunciation? Also, when do you tip your waiter or bartender...per drink or food order or at the end of the visit?

we left our tip with the waiter as we left, he said he would take care of the bartender, since the bartender heard it..i wasn't too worried about the bartender getting his cut. it was nice that the waiter had called for a taxi (they park on the street, outside the front entrance of nachi cocom) when he saw me gathering our stuff.

not sure of how to pronounce it, heard it a couple of different accents..the taxi driver said it's a mayan word?
