Our flight takes off in mid afternoon from Rome, what is the latest time we need to disembark?

We wanted to disembark as late as possible in Singapore, the ship arrived early and most people were off very early, we ambled off about 9.30 a.m. and there wasn't much baggage left, indicating we were amongst the last off. They pretty much want to see the back of you ASAP.

WEe dock in Civit. at 5:00AM. WE don't want to fight the luggage and take the train. Is 8:00AM a reasonable time to tell the shuttle company that we'll be off of the ship?

3 hours should be plenty of time, but just make sure that you get a cell phone # from your shuttle company in case of customs difficulties.:D

The shuttle company works with these situations all the time, they will be aware that disembarking is not something that you have control over.
