Choice of restaurant in St Lucia

Given the choice between these 3 restaurants which would you recommend.

We're going on a Serenity Tour and I believe we have the choice of where to eat as we are on a private tour with them.

The ones mentioned are. Fond Doux estate, Hummingbird restaurant, and the Beacons restaurant.

Has anyone tried any of these or has any thoughts on which would be better or nicer.

Any photos would be an absolute bonus.

Hope someone can offer some advice.
