What activities can we pre-book?

Ok, we are going on DCL Mexican Riveria. This will be our first 7 day DCL cruise. I know we can pre-book excursions and Palo ressies. I know you can pre-book massages. I think I've heard about things like high tea or character brunch. What are these things, when do they have them, how much do they cost? Is there anything else I'm missing that we should think about pre-booking?
