When do you start booking?

How far in advance does a person need to start booking private tours in Egypt, Tunisia, Malta and Cypress? Are any of these places NOT to do private tours based on personal experience? TIA

FYI DW and I are taking a cruise beginning with a pre-cruise stay June 1st~ ~ ~ we'll return home June 17th. On June 18 I'll begin working on our 09 cruise to Egypt and the HolyLand and at that time on I'll begin to make plans for 09 incl excursion reservations.
