Deciphering the Menu

I think the OP is referring to cooking terms and the names of dishes, typically listed on upscale menus in French. Most people will know "gratin" or other commonly used cooking terms, but some of them are tricky. What a neat website!

 

And then of course there are the menus in English that are no less confusing than any foreign language could be: "A sprightly tangle of lovingly gathered field greens, tossed cheekily in hand-pressed kumquat oil and a teasing spritz of Waikikiean pineapple essence" and all that nonsense.
