Using the calendar on CCL's website the 25 days of oil prices under 75.00 a barrel would be December 7th. Our cruise leaves December the 8th. If I understand it correctly we should get it back as an onboard credit right?

Well, i'm guessing search was down again. I can only give helpful info, no specific answers. It's $70 and its trading days which doesnt include weekends or holidays. It also has to be 25 days prior to 5 days before you sail. Yes the last part can be confusing. So basiclly you need to figure out what would be 30 trading days from your departure date, then you will have your answer :)
