What is the earliest time we can board?

Hi We are going on VOS on May 30 out of Bayonne Port. The ship isn't scheduled to leave until 11p.m. What is the earliest you think we can board? I have always taken 5p.m. cruises and arrive by 12 for lunch but am confused as to what time we can get on board and eat!
