Boat time vs. Excursion time

This is my first cruise, so please bear with me if this has been asked or is a foolish question. I know the boats maintain "ship time" for the course of the cruise, but what about at the ports. For example, say we port in Cozumel from 9-5 and the excursion times are listed as 8:30, 10:00, 11:30, etc. What is the difference to take into account when booking the excursions. We are booking outside Carnival, so I just want to make sure I'm doing it right.

If you're leaving from Galveston it's the same time except for a few weeks of the year. Mexico goes onto daylight savings time at a different time than the USA.

 

If you're leaving from Miami or Fort Lauderdale, you'll be one hour ahead.
