You can often get rates as good as ES by booking a group rate. See if there is a group cruise here that would suit you. Also, if you book the non-ES fare, with a decent TA, you can just call and get a price reduction if the price goes down. I have done that twice for my 2010 Hawaii cruise on NCL. Price has come way, way down since I booked it. The ES rates have a "price protection" feature but my point is you do not have to book ES to get that. You have to look at all the options that are available. And please read all the small print before booking. It will save a lot of heart burn later.
