I'm not a big drinker so 15 drinks is ridiculous. There is a Zin at Vines that qualifies under plus, but it is only available there. Also pours are (generally) VERY .... tight, stingy, small. Also you must arm wrestle for a decent wine glass. Apparently guests steal them....sigh.
Now I am quite liking the coffees and waters Plus includes, and ymmv...but wine drinkers be advised.
Currently onboard, never have we had to arm wrestle for a decent wine glass. We are always given the appropriate glasses for wine we are drinking.
We are in Vines daily, on the same voyage, and see no need to advise anyone of this.

You don't. Room numbers are written on luggage tags at the port.

Did you book using a casino offer? Those aren't full price cabins.
In fact, on our current sailing, many casino guests had room numbers assigned at the port.

As long as one is 16, younger can been in the cabin with them.

It won't work, whether you switch cabins when onboard, with your booking number both guests in a cabin, whatever age, must purchase the plus or Premier if you choose to do so.
We've had first hand experience with this.
We just purchased plus for all of us. Now our eldest is 16 and they still both get plus in their own cabin with their own booking number.
Medallion access has nothing to do with plus.

Princess IS a family brand - our family loves cruising Princess. There's families who don't want all the roller coasters and mall type cruise ships. Ours is one of them.
What happens when the older elites pass in 20 or so years? Princess needs new business. They spend more money, YOLO, instead of the penny pinchers.
We like Plus for our family because there's no surprises what our final bill will be.
They're doing quite well in our opinion.

We were on the 3 day prior to the eclipse cruise, then jumped over to the Sapphire 32 day since the TSE was sold out.
Discovery was a hot mess on NYE, and the new hotel GM has really turned things around for the better.
Cole is such fun as a CD!

Our kids get charged the $60 pp per day.

With Amtrak they are gonna need to hold the ship for a few hours or a day with how their cross country trains never run on time.

The room steward doesn't get every single spec of dust out of the cabin from one cruise to the next.
For example, eat the nuts, perhaps some spill from the package into a bedside drawer. Person with allergy stores clothing in there.
Eats peanuts on bed with throw pillow. Do they get changed from cruise to cruise? No.

Just try not to bring peanuts onboard due to allergies other guests may have.
Even if you consume in your cabin, there's peanut dust.
