All the balcony cabins I've been in, up to and including the Sun about 2 weeks ago, did have coffee makers. They are the 4 cup Mr. Coffee type. Oh, and the room attendants do leave coffee packets and associated items in the room. It's very similar to what you would find in a motel room.

On the NCL Pearl ship it stated you may bring up to 2 bags weighing up to 50 lbs each...Is the carry on bag considered one of those bags? Would I be allowed to bring 2 pieces of regular luggage, and 1 carry on bag?

You can carry on...well...as much as you can carry on. We use a folding two wheel cart and carry on two or three 12 packs of Diet Pepsi and then numerous smaller bags of personal items. The only requirement for carry ons is they must fit through a scanner, similar to the type used by airlines, although maybe a little larger.
