    We've never had one walk out prior to the handover, because they want to take every last minute to finish up their business, like pardoning political cronies, etc.   We have had several times where the First Family packed up and was gone prior to the Inauguration hoopla, no nice formal handover.  It's a "people thing", and it takes all kinds.

     

    I wish that today would be a decisive awarding of the job, but alas, it will most likely not be.  Due to Covid-19, so many people across the country voted as mail-in.  Those votes have to be postmarked by today, so it could take some time to count them.  In most elections, mail-in is an insignificant number, this year isn't completely different.  All I hope is that when all the votes are counted, it is a sound and solid win for one particular candidate (even if it is not mine).  We can't deal with any more divisiveness in this country right now.

    Thanks Lola, I knew what you meant.  The 2000 election was most unpleasant with the indecision, and political maneuvering.  All I ask for is that the eventual "winner" actually wins both the popular vote and electoral college vote.  When that doesn't happen, it really makes me question why I stood in line (this year, outside, in the cold) to vote when it doesn't seem to count.  For the first time since I was eligible to vote (which is about 10 Presidential elections), there were 5 different candidates to choose from for President.  Only once can I remember when we had a viable 3rd party candidate, and I voted for him - he got about 20% of the nation's vote. 

     

    Well, off to the office for a full day of budget, month end financials, and PPP forgiveness application (oh my!).

    She baked them with Thai spices, and served them with baked sweet potatoes, zucchini, and tomatoes, the latter two with grated cheese.😊

     

    Its a thing, much like Meatless Mondays, or Taco Tuesdays, it is Thigh Thursdays.  I always stock up when Fresh Market has theirs on sale.  The broth that comes off them when I make chicken & dumplings is nothing short of heavenly.

    Description

    You will love this family-friendly, one-pot Instant Pot Moroccan chicken stew with potatoes, carrots, olives, lemon and apricots. Gluten-free and Whole30-friendly. Serve with couscous, rice, quinoa, crusty bread or cauliflower rice or green veggies for a lower-carb version.


    Ingredients

    2 lb / 1 kg chicken thighs, skin and bone off
    1/2 teaspoon salt
    1/2 teaspoon pepper

    2 tablespoons olive oil
    1 onion, halved and sliced
    1/2 teaspoon salt
    2 teaspoons minced or crushed garlic
    1/2 tsp ginger
    1/2 tsp cinnamon
    1/4 tsp chili
    1 tsp turmeric powder
    1 tsp paprika powder
    1 tsp cumin powder
    Juice of 1/2 orange (about 23 tablespoons)
    1 cup of chicken stock
    2/3 cup olives (green and black)
    3 oz / 90 g dried apricots, sliced in halves
    1 large carrot, sliced thick
    67 lemon slices (one small lemon)
    4 small potatoes, sliced into quarter wedges (about 0.6 lb / 300 g)
    A little extra salt
    Garnishes: toasted almonds and fresh parsley

     

    Instructions

    • Prepare all ingredients first. Cut the chicken thighs in halves and trim off any excess fat. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper; set aside.
    • Turn the Instant Pot and press the Sauté function key. Once the inside of the pot gets hot, add the olive oil, onions and 1/2 teaspoon of salt. Cook for 3-4 minutes, stirring a few times until lightly browned.
    • Add garlic and spices and stir through to release the aromas. Add the orange juice and chicken stock and stir through, scraping off the bottom. Now, add the chicken pieces, olives, apricots and carrots and stir in the spiced broth.
    • Insert lemon slices around the chicken and add the potato wedges on the top. Sprinkle them with a little extra salt.
    • Pop the lid on top, lock and make sure the top valve is pointing to Sealing. Press Manual/Pressure Cook and set to 10 minutes at HIGH pressure. The Instant Pot will take about 10 minutes or so to come to pressure. Once the timer is done, allow 15 minutes for natural pressure release and then use the quick release method (point the top valve to Venting) to let off the remaining pressure.
    • Open the lid. Remove the potatoes and lemon slices to a plate. Transfer everything but the sauce to an oven-proof casserole dish or frying pan. Place the potatoes and lemon wedges on top. Add heaped tablespoon of flour dissolved in 2 tablespoons of water to the sauce and stir through, to thicken. Pour over the chicken and potatoes and pop the pan under broil/grill for 5-7 minutes to brown slightly. This step is optional as the tagline will be ready to be served right away. I like to finish the whole thing with some toasted almonds and fresh parsley.
    • Serve with couscous, rice or cauliflower rice for a lower-carb version.

    Full disclosure, I served right from the instant pot, did not thicken the sauce and broil, etc.   It was ready, we were hungry, and it smelled too good to wait any longer.  For the potatoes, I used fingerlings that I had in last week's veggie box, nice waxy ones.  Jeremy gave it two thumbs up, so I've saved this off to put in the rotation, probably every two weeks or so.   Trying to decide what our weekend meal will be - I always make something big, we have it for Sunday & Monday, and some goes in the freezer for a night that I am not up for cooking (or if my brother invades the freezer).  I'm thinking either a lasagna or meatballs.

    Sorry to hear that, but guess it means more time for quilting!   Fun fact, I was assistant manager of the fabric store in my town when I was in college - 25% staff discount, including on sale items.  So, I'm still working off some of my stash, good thing I had classic taste since this fabric is 35+ years old.  I had acquired some great suiting wool, which isn't enough to cover my posterior at this stage of the game, so it was stripped and braided into an entryway rug when we moved to the new house last year.    If you ever want to come to the dark side of weaving, let me know ......

  6. mmmm, fried green tomato blt!  Yes, lots of leftovers, which is good since I'm in the office tomorrow.   It was perfect meal on this first snow of the season eve.  Spices are garlic, cumin, chili, paprika, cinnamon, and ginger.  My tummy feels warm, great spices for digestion.

     

    Give me a few minutes to waddle into the office to upload the recipe on the laptop.  Honestly, it looks a bit intimidating, but it came together really quick.  I did up some basmati while this was cooking, so everything was hot & fresh. 

     

    I picked up my last csa box yesterday, so there's some great seasonal cooking in the upcoming week.  The butternut squash could double as a lethal weapon.

    Long time quilter, from a long line of quilters.  My first quilt was a 4H project which also doubled as a social studies project in 7th grade.  When my Mom passed away in 2005, I inherited her weaving loom and feel in love with that.   My goal is to be able to retire with enough eyesight ( and brain cells) to enjoy sewing & weaving.  Here's hoping...

    Lola, I hope they fit as well.  If not, let me know and I will happily fire up the sewing machine for you.  It's been lonely lately, and I'm trying to work up the energy to make something, which will most likely be a cute little doggie cover to cute Mr. Cutiepie dry when carnage is raining from the skies this winter.   It's not about keeping him warm, he has a fur coat, it's the soaking wet on top of it being cold that worries me.  Plus, less mess to mop up when he races inside.

    I hook over when I write, so basically I always write upside down.  When I was first starting school, I also had a habit of starting from the back of my notebook.  Its the way we're wired, right brain left brain, which only got worse since the aneurysm.  Poor DH is constantly hovering, so I find it necessary to play the occasional game of hide & seek on him...  yesterday, I hid in the she-shed, when I heard his voice trailing around the front of the house, I made a dash to the deck.  By the time he got back around the house, in a panic, I was resting in a chair by the heater, pup under my feet.   He's convinced that he just missed me 😁

     

    Gotta make your own fun in these days.

    On rounds with my residents, I'll often want to draw or write something to explain a concept. This works better if I draw it upside down, so it's right-side up for them. With a little practice, it's not that hard.

    Super easy if you are left handed.

Howdy all, and thanks for the shout out.  From reading the current page, I was starting to wonder if I was really in the same area as @jpalbny and @FlyingScotSailors.  Wednesday evening coming north from Albany was interesting, but not terrible.  I got home to Jeremy & the pup asking "what's for dinner?".  Answer was leftover Chorizo stuffed peppers, German potato salad, and a green salad.  We took Wynne for a neighborhood walk at about 6:15pm, only to find the big circle of homes were without power (about 40 homes).  The 6 on our street were light up like nothing happened.   I think the neighbors were out for a couple hours, .... see, Halfmoon has its advantages!

     

    As an aside, we have an automatic generator here at the new house, not sure that it has kicked on in the year we've been here.  We had one at the old house... lifesaver.  So lesson is, if you lose power, and its safe to drive to Halmoon, we have power!

     

    Sorry I haven't been around much.  I've taken a bit of a break from social media, its too hard for me to keep up with everything.  So, my focus has been trying to work my job (currently 2 days office, 3 days from home), and get better.  On the surface, I escaped any major detriments from my anuerysm in December, but they are there.  It takes me a little longer to do everything, I am so fortunate to be as well as I am.  I'm back to cooking, but everything requires a recipe - including chicken & dumplings 🤪 

     

    Here's a pick of me & my 60lb pup, yes, my hair has grown back curly & crazy!  Here's hoping 2021 is a better year, the Canadian border reopens to family, and we can travel soon!  Love to all, and I hope everyone is well.

'Morning!  Just a quick drive-by posting - kudos to JP & his hospital.  It was on the news yesterday of the release of a recovered Covid patient - Vet.  Nice to see you all have been working on some potential treatments that are showing great results.  Stay safe my friend.  I'll be down in the office in Albany tomorrow for some meetings (our building was badly damaged in the riots over the weekend 😒  so our return to normal will be delayed.  Not sure why they felt it necessary to smash every window in an office building that houses non-profits, but left the State Sheriffs association two doors down unscathed.  The landlord covered over the first floor damage, but alas, the windows on the 2nd and 3rd floor (where our offices are), and open, so we were shooing birds out Tuesday morning.   Not good, when you realize how close we are to the Red Tail Hawk nests at the State Ed Building..., it don't mind sharing my office, but they're too noisy, and messy.

    And that is why there are less potholes on that road .... good intentions hold up so much better than asphalt & tar. 😉

    @UpstateJan - I was amazed by Exit 9's speed today. I ordered around 10:30 and they emailed me by 11:15 to say the order was ready. Faster than Empire was last week, by far!

    YAY!  Glad my hometown did right by you.   I currently live 1 1/2 miles north and east of Exit 9, so that's staggering distance.  They really are nice folks.

Fantastic shots JP!  Since this is our first spring at the new house, we are happy to have the same "usual suspects" at the feeder.  Lots of woodpeckers, including the Redbellys, no Pilated as of yet.  We had several Carolina Wrens sitting on the little doggie fence on the front porch, right outside my office window, singing their little hearts out.  Home isolation is working out well, I'm getting a butt-ton of work done that was going slow due to my recent medical excitement.  Hoping that when we get to go back to the office, I can go back full time, instead of the 2 half days a week I was able to do in mid March.    I was in the office Saturday (vendors appreciated getting paid, I'm sure), and downtown by the Capital building looked like a ghost town, complete with tumbleweeds blowing across State Street.  Even the spring sighting of the Hawks of Hawk Street were missing.   Very strange times.    Stay safe my local friend, hope to get to meet you & Chris as well as the FlyingScots once the 2020 Plague is passed.

    And our local store is really slow with orders, so wine is a precious resource these days...they haven't filled my order that I placed last Thursday yet!

     

    On a serious note, the second day of work from home went well. Now relaxing in the hot tub with an Albariño (no, autocorrect, not with an albatross...lol)

    Exit 9 W&L has curbside pickup, and many cars in the parking lot.  The one industry not seeming to be devastated by the pandemic.
