How safe is it to give all your card details to local caribbean excursion companies , we have been asked for all our card details yet they want cash at the end of the trip , the card details are for a no show but how safe is it to give a complete stranger all the details

That really depends on who you're using. You'll probably get better information on the Port of Call board. Ask there, identifying the vendor in question.
