We have booked our first HAL cruise out of San Diego, having done a couple of Princess and couple ofcarnival cruises. My questions are what nights are formal nights on a seven day cruise and can you purchase a bottle of hard liquer to be delivered to your room as other lines do?

Most (if not all) formal nights are "at sea" days. I don't know your itinerary, but most 7 day cruises have 2 formal nights.

Yes you can pre-purchase liquor through the onboard gifts section on HAL's webpage.

Formal night #1 - usually on first sea day after departure

Formal night #2 - usually on last sea day prior to arrival (not the very last day of your cruise, the day prior)
