I know that Vichyssoise (cold potato and leek soup) is made with cream and chicken stock. That's a new one to me. I guess it depends on the soup, but I would say, unless it's an ice cream soup (never seen one though), the answer is no. :) The only fruit soup I had used brandy and it was hot. Cotton Posted January 29, 2005 #4 Share Posted January 29, 2005 Caterer here. I use half-and-half when making most cold soups, i.e., strawberry bisque or vichyssoise. For gazpacho, I use tomato juice as the base. I've heard tablemates say they think the strawberry soup is made from melted ice cream.
