I am taking my first Princess cruise on the Ruby in June and had the following questions:

 

1. Can you book the ultimate balcony dinner or champagne breakfast beforehand or do you have to wait until you are on the ship? Also, do you have to wait until you are on the ship to book the specialty restaurants?

 

2. We are on the waitlist for a couple of excursions. What are our chances of being able to participate in those? Will they notify us if spots open up?

You have to set up those reservations once onboard.

 

Our experience is that excursion waitlists usually clear. They will even add more space to it if need be.

You have to wait till you are on the ship to book the specialty restaurants and the ultimate balcony dinner. Just book it the day you board, no problems. Sometimes the waitlist will clear and sometimes not. Keep watching in cruise personalizer under your shore excursions, and it will show if you have cleared the waitlist.:)

If you are on waitlists for excursions, should a spot become available, Princess will notify you. BUT, some excursions have very limited capacities, and you might want to get a guaranteed (not waitlisted) booking on another excursion so that you do have something planned for the port(s) in questions if that is important to you.

With sailing a little more than 2 months away, final payments have been made for the cruise itself, and especially on limited capacity tours, you might not get lucky and clear the waitlist.

Actually, you can book the balcony dinner and breakfast ahead of time. They are in the special services section. Just call Princess and it can be done. Have your cc ready to pay at the time. Once on board you schedule the time with the room service dept. The specialty restaurants must be booked onboard.
