At what point does Princess stop taking excursion reservations online prior to the cruise? Is it 2 weeks prior?

They lock the personalizer 5 days before your cruise. No additions or changes can be made at that time online. You can book excursions up until that point unless there is no longer space available. Enjoy!

Any excursions you book online do not show up on your charge until after the cruise. You can cancel any excursion you booked online when you are on the ship. It must be done 24 or 48 hours before the excursion. Book whatever you think you may want to do: better to book ahead then be waitlisted when you board the ship.

Not true, the charges will be on your onboard account as soon as you board and the tickets will be in your cabin.
