Well, after living in Houston for almost 64 years, I was going to say that it could get as low as the low 20s overnight (rare, but it has happened) and it could be has high as 80 in the afternoon. But we have done several cruises in January. You should be just fine. Be sure to bring a jacket and have it with you (not in checked luggage).
