We usually fly direct to the country we go to but this time we fly thru paris change planes to go to italy, Do we collect bags in Paris and go thru customs or just change flights and do the cistoms and luggage check in Italy

You should go through passport control (immigration) in France, and then pick up your bags in Italy, where you will clear customs if you are on one ticket.
