I can't find them to prebook online on the epic..and my cruise sets sail 4 days from now!

Neither of those venues need reservations. You just walk in when you please.

Yep! Just like a club/bar on dry land. You come and go as you please. There are a couple of nights when the facilities are used for other things (other than HATM and Slam Allen), but they're rocking most nights.
