Quite a few boat operators for snorkeling trips are ex-pats too. A great many waiters/waitresses/bartenders and others in food preparation are ex-pats. Those Cayman style conch fritters are highly likely to be cooked by a Jamaican chef and server by a Canadian waitress. Taxi or tour bus drivers are almost 100% Caymanians.
