We have not been on Viking, but have done 3 European River cruises and all were great. On Uniworld we did a b2b from Constanta, Romania on the Black Sea to Amsterdam. On Grand Circle, we have done two. First, a Russian river cruise from Moscow to St. Petersberg, and and Elbe River cruise in Germany

Last summer we did the Grand European Tour from Budapest to Amsterdam with Viking. I can't say enough good things about it. It may be our favorite trip ever. I wouldn't have been happy with a 7 day cruise as it would be too short unless you plan to stay longer at either end. Ours was 15 days and we still weren't ready to get off.
