Elite cocktail "hour"?

Haven't sailed X yet, but hope to soon. What are the hours for the Elite cocktails in the evening, please? And is this every evening?

5 to 7pm, but not on embarkation day and officers reception.

We were on the Summit 10/19 and they had a voucher system in place. 3 vouchers per person per night not including embarkation and officers reception. It was not a problem for us since we had the bev package so the vouchers were essentially useless. Vouchers were valid from 5 - 7pm and could not be used in the dining rooms or Michaels Club.
