Assuming normal conditions, about how long does it usually take to get to open water? If I schedule dinner at 5:30 would we be able to watch the entire sailaway?

I don't remember the exact time spent, but you should be well on your way before dinner. We attended the sail-away party, and climbed the rock wall before our 5.30 dinner :)

Not long at all. You will definitely be able to see the full sailaway and make it to dinner on time. In fact, provided the ship leaves on time, you will likely be out of sight of land by dinner time.

pier to the end of the jetty is about 2.25 nautical miles and the ship's normal speed once away from the pier, while in the port, is 6 to 6.5 knots . . . transit time is around 20 minutes . . .

Maybe 20-30 minutes before you get to the end of the channel.
