Assuming normal conditions, about how long does it usually take to get to open water? If I schedule dinner at 5:30 would we be able to watch the entire sailaway?

 

Not long at all. You will definitely be able to see the full sailaway and make it to dinner on time. In fact, provided the ship leaves on time, you will likely be out of sight of land by dinner time.

Maybe 20-30 minutes before you get to the end of the channel.
