Island Time VS Ship Time

I am looking at booking a private Catamaran excursion through Island Marketing… They say boarding time is 11:30 a.m. LOCAL TIME.

We are in port on the Sunshine from 11:00 - 7:00.

Does anybody know if in December there is a time difference?

Depends on the Ship / Captain. On the Royal Princess, the captain changed the ship time to match the local time. A Friend who sailed two weeks before us, on a Carnival ship, the captain kept the time set to Florida (eastern time). Which was an hour different for them. Made catching their excursion weird as they were off an hour.
