Yes, I've done it several times, but you don't have much room for error. I'd select self-assist departure so you are among the first off the ship. I'd also arrange for one of the shuttle services like Cocoa Beach Shuttle or Travelynx. If you can arrange to get on their shuttle before 8:30am, then you should be fine.
