By the way, this is a good point to post the scaled down recipe. It makes 6 servings. One must bake this cake by observation. When it looks done, it is done. I usually cook it about 11 minutes. If one knows much about baking, one will see the reason it is "melty" is that there is just enough flour to hold it together. We scaled Carnival's recipe down but couldn't help but share it in its original form. Serving 90, it called for 8 pounds of dark chocolate, 8 pounds of butter, 80 eggs, 5 pounds of sugar and 5 pounds of flour! This kitchen-friendly version will make 6 individual cakes. Make sure that the eggs are at room temperature and chocolate is still warm when combining. Ingredients 1/2 lb dark chocolate 1/2 lb butter 5 eggs 1/4 cup plus 2 tbsp sugar 1/4 cup less 2 tbsp flour 1. Melt the chocolate and butter together. 2. In a separate bowl, mix the eggs and sugar; whisk for a few minutes, then add the flour. 3. Add the egg mixture to the melted chocolate and mix. 4. Pour the mix into greased individual serving dishes. Bake in the oven at 200 degrees Celsius (between 375 and 400 Fahrenheit) for 12 minutes. 5. Enjoy warm! Don't know if I want to try it now based on what I've read here. Also not very big on chocolate, maybe a brownie with nuts once or twice a year. I expect they like a lighter version of chocolate, like regular chocolate cake or milk chocolate. The melting cake is a strong rich chocolate flavor. I have tried it a few times thinking maybe I had just tried it on a bad night, but I do not like it at all. My daughters on the other hand love it and order it for dessert at every meal. Can't wait until Oct to have them again, it has been far too long! I do understand however, that not everyone would like WCMC. To each their own. We all have different tastes, thank goodness!!
