We do not think this is a "better" issue but rather one of your personal preference. You might want to give consideration to the fact that Cassis is a very small cute village wheras Aix is medium size city (over 140,000). So your preference of the smaller village vs larger city might influence your decision.

You might want to learn more about which wineries they plan to visit. Some are very scenic chateaux, some might be more farm like. This could affect your decision. A close reading of the TripAdvisor posts will give you an idea of the wineries visited. Most wine tour companies tend to have arrangements with a few vintners to take their clients to.

You could also consider a more traditional guided sightseeing tour visiting Aix and Cassis. You can enjoy the very fine wines from the region at lunch. Either a Bandol rose or a white Cassis.

we used provence wine tours on a port trip from Toulon

we visited 3 wineries which were all small farm like locations

Cassis was a lunchtime visit and a very pretty fishing village

they also took us to a picturesque viewing point

my vote would be for a countryside tour as opposed to town based on our [admittedly] different itinery

Depends on your personal taste. The scenery around Cassis is more spectacular and Cassis itself is a charming (though very touristy) coastal fishing village. Aix is inland and a stunning and elegant medium-sized historic city.

No-one has mentioned the wines. Cassis is renowned for its crisp, lemony white wines, which are rarely available outside the area (it's a very small appellation). Bandol is famed for its reds.

The Aix wines, on the other hand, are overwhelmingly roses and much less special (although very tasty and drinkable on a hot day!) So, if you're a wine buff, I would definitely take the Cassis tour.
