The entire place is open from the dolphin swim area to the beach, snorkeling, pool, shopping, replica ruins, lagoon, alligator exhibit and so on. You are free to do whatever you want once you are in. :) You mentioned the dolphins don't open until 9am, are you saying that your swim is scheduled for 9am? If so, I wouldn't adventure off "too far" because they usually want you there just a little before the swim for check in and briefing of the equipment and what is going to happen. So, that won't give you much time to explore because the place is pretty big.
