If you wish to obtain pesos. check with your ship's guest services/purser desk. They usually will exchange at a reasonably decent rate. Otherwise, you'll need to take a taxi to a bank or cambio. Bank would be preferable. Do NOT attempt to use the ATMs on the piers or at various places around town. They've been known to do a lot of phishing on accounts with hidden scanners.

Use a bank ATM or one of the machines in Chedraui or Mega stores for safer transaction. Also the best exchange rates. Taxi will usually quote you at 10 to 1 for the dollar, I would pay in Pesos if you can. Beware being extremely over charged outside of SR Frogs. Walk down a block or so and grab a taxi at Mega instead.

We've been to Coz several times and have never needed to change dollars to pesos -- the dollar is accepted everywhere you are likely to go, just bring lots of small bills because cab drivers across the globe never seem to have change when you pull out a $20. :(
